Brown Rice Flour Bread (bread machine)

This bread is chewy, flavorful, and has a soft crust. It holds together well and makes the perfect sandwich, though it is also delicious on its own. It is a healthful bread, as it is made with brown rice flour and does not have any added refined sugar. It is naturally gluten-free and delicious, though not dairy-free due to the addition of nonfat dry milk. This bread recipe is also quite versitile. You may substitute different flours and sweeteners to suit your tastes and make it your own. Though I haven't tried it, I imagine this bread would also be great for french toast and to make bread crumbs or stuffing. Enjoy!

Ingredients:

  • 1 1/2 cup water
  • 1 tsp apple cider or rice vinegar
  • 3 tbsp agave, honey, or maple syrup
  • 3 tbsp extra virgin olive
  • 3 large eggs, with water added to equal 3/4 cup
  • 2 1/2 cup brown rice flour
  • 1/2 cup cornstarch
  • 1/2 cup nonfat dry milk
  • 1 tbsp + 1 tsp guar gum
  • 1 1/2 tsp salt
  • 1 3/4 tsp yeast

Directions:

Bake batter in bread machine on gluten-free or Quick Yeast Bread cycle. When baking cycle ends, immediately remove the pan from the machine and place it on a rack. Let cool for 10 minutes before removing the loaf from the pan. Let loaf cool to room temperature before slicing. Slice and enjoy.

Notes:

Almond meal may be substituted for cornmeal to make a more mild tasting loaf. Personally, I love the added texture and flavor from the corn meal, but an almond/rice loaf is nice for variety every once in a while.
Guar gum may be substituted with xanthan gum, with the same measurements.
This bread could certainly be baked in the oven, though I have not tried it to determine rise/bake times and oven temperature. Will update with details!
Please remember to let the loaf cool before removing pan, and again before slicing. Otherwise, it will crumble and fall apart as you slice it. Crumbs do not make a good sandwich!
