How to make sushi rice step by step

In Japan they use special tools made of wood, and although we have them we should not use metal bowls, because it can alter the delicate flavor of sushi rice. Basically, we need a heavy-bottomed pot with tight-fitting lid, a spatula or wooden spoons, a glass bowl, a platter or large wooden bowl, and a fan.

Ingredients for sushi rice.

Method

To make sushi rice you need less water than usual, because afterwards we will add the vinegar. It is essential to use a pot with a tight lid that fits well.

Before cooking the rice, soak well, to soften it the sushi rice.

Step 1. Wash and soak

Pour the rice, as measured in a large bowl, cover with water and drain on a colander. Repeat the process 4-5 times, until water runs clear, eliminating some of the starch. Let stand in colander for at least one hour.

If you want to speed up the process you can let the rice soak 15 minutes under water after washing it.

Step 2. Cooking rice

Pour the drained rice into the pot and cover with water. Bring to a boil over medium-high heat until it starts to boil, with lid and do not remove the lid at any time.

To make it easier for beginners, it is recommended that you use a glass lid so that you can see the rice.

Lower the heat and let simmer for 5-7 minutes, remove from heat and set aside, unopened for another 10 minutes.

Step 3. Prepare sushi vinegar

The easiest is to use ready-made sushi vinegar, but if you want you can prepare it at home. To prepare, mix the rice vinegar, sugar and salt in a bowl, stirring well until dissolved.

When using raw fish for sushi, it is better to use less sugar, while other ingredients such as smoked fish works well with a sweeter rice.

Step 4. Flavored rice, fanning

Pour the rice on a in a wooden bowl. Pour sushi vinegar while stirring gently with a spatula. We then use a fan or cardboard to let the sushi rice cool quickly.
