Check Out This Potpourri of Quick and Easy Recipes!

This article has a variety of quick and easy recipes for the busy cook. From a Spinach-Cheese Omelet made with fresh spinach, tomatoes, and Swiss Cheese perfect for an easy meal anytime of the day to Double Chocolate Mousse for a tasty dessert to a Simple Ambrosia Salad suitable for any meal, these recipes are sure to come in handy.

QUICK & EASY SPINACH-CHEESE OMELET
2 large eggs
2 tbsp water
1 tbsp butter
1 cup coarsely chopped fresh spinach
1/3 cup chopped Roma tomatoes
dash of salt
1/3 cup shredded Swiss cheese
twist of freshly ground black pepper
Using a blender or small food processor, process the eggs and water until blended.
Melt the butter in an 8-inch non-stick skillet. Over medium heat, add the spinach and tomatoes and saute for about a minute until the spinach is wilted. Add the egg mixture and salt to the skillet. As the mixture cooks, lift edges of the mixture with a spatula while gently tilting the pan to let uncooked portion run underneath. Cook until almost set; about a minute. Cover and cook for another minute. Sprinkle with the cheese and the pepper; fold in half to melt cheese. Using a large spatula, slide the omelet onto serving plate.
Serve with buttered toast and fresh berries for a yummy meal.
This recipe makes 1 serving.
DOUBLE CHOCOLATE MOUSSE
1 1/2 cups cold milk, divided
2 squares semi-sweet baking chocolate
1 pkg (4 servings) chocolate flavored instant pudding and pie filling mix
2 cups thawed frozen whipped topping, divided
1/2 cup fresh raspberries or blueberries
In a large microwave-proof bowl, combine the chocolate with 1 cup of the milk. Microwave on high for 2 minutes then stir until the chocolate is completely melted. Stir in the remaining milk.
Add the dry pudding mix and beat with a wire whisk for a couple of minutes or until well blended. Refrigerate for 20 minutes then gently stir in 1 1/2 cups of the whipped topping. Spoon mixture into 6 individual dessert dishes. Refrigerate, covered, until ready to serve.
To serve, divide the remaining whipped topping evenly between the 6 dishes placing a dollop atop each. Garnish with the fresh berries.
Yield: 6 servings of 1/2 cup each
SIMPLE AMBROSIA SALAD
This recipe only requires a few minutes of your time. It should, however, be chilled for an hour before serving.
5 large navel oranges, peeled sectioned, cut into 1-inch pieces
1 can (6-oz) pineapple tidbits, drained
1 cup flaked coconut
1/4 cup powdered sugar
Combine all the ingredients in a large bowl and mix together well. Cover and refrigerator at least an hour for best results.
