Check Out These Recipes For The Diabetic in Your Life

If you are diabetic or cook for someone who is, be sure to check out these recipes for a variety of ideas. From a Salmon Sandwich for a healthy lunch to an appetizer or snack of Hot Wings to a Berry-Banana Smoothie, these recipes will give the diabetic a healthy tasty alternative.
SALMON SANDWICH
3 tbsp mayonnaise
1 tsp Cajun seasoning
dash of hot pepper sauce
1 can (14 3/4-oz) salmon, drained
1/2 cup thinly sliced scallions or green onions
1/4 cup ground flaxseed
1 large egg, beaten
8 lettuce leaves
4 whole-grain English muffins OR 4 whole-grain sandwich thins, toasted
Mix the mayonnaise, Cajun seasoning, and hot-pepper sauce in a small bowl; set aside.
Place the drained salmon in a large bowl discarding as much of the skin as possible. Add the scallions, flaxseed, and egg. Mix well and shape mixture into 4 patties.
Heat a large nonstick skillet over medium-high heat then turn off the skillet while you spray it with nonstick cooking spray. Turn heat back on to medium-high. Place the salmon patties into the skillet and cook 4 minutes or until browned on the bottom. Using a large spatula, carefully turn patties and cook another 4 minutes or until cooked through and bottom is browned. Press down gently with the spatula a couple of times during the cooking of the second side.
Place 2 of the lettuce leaves on the bottom of the English muffins or sandwich thins. Place a pattie on each. Top with a dollop of the sauce you made earlier. Top with remaining muffin or sandwich thins.
HOT WINGS
12 chicken drumettes (about 1 1/4 lb), skin removed
1/2 cup lite soy sauce
1/3 cup lemon juice
1/2 tsp to 1 tsp (how hot do you like 'em?) crushed red pepper flakes
Combine all the ingredients in a medium bowl; gently toss to coat the chicken. Cover and let stand at room temperature for 10 minutes to marinate.
Oil broiler pan. Remove chicken from the marinade, reserving the marinade. Place the chicken on the oiled broiler pan. Broil 4 to 6-inches from the heat for 10 to 15 minutes until the juices run clear. Turn once during the cooking and brush occasionally with the reserved marinade.
2 drumettes = approximately 1 gram carbs to 7 grams protein and 0 sugars. Great diabetic snack as the protein to carb ratio is so high. (That leaves room for more carbs somewhere else!!)
BERRY-BANANA SMOOTHIE
2 cups low-fat milk (1%)
1 ripe banana, sliced
1/2 cup Splenda Granulated
1 pkg (0.13-oz) Strawberry Flavored Unsweetened Drink Mix
2 cups ice cubes
Place all ingredients in a blender container and process until smooth; scrape down sides as necessary.
Serve immediately.
Yield: 4 servings
