Cook A Smoked Polish Sausage, Apple and Sauerkraut Casserole In Your Microwave Oven

My Grandmother often made a tasty casserole out of smoked Polish sausage, apples and sauerkraut that she started on the stove top and finished off in the oven. This was always one of my favorite dishes, but it is a bit time-consuming. I have come up with a modern version that comes together quickly in a microwave oven. I also swapped out the lard that is traditionally used in this dish for a combination of butter and extra virgin olive oil. The plain old white sugar is replaced by a healthier sweetener that brings a lot of great flavor to the dish:

maple syrup. This casserole might not be quite as good as Grandma's home cooking, but nothing ever is, right? But this dish is delicious and easy to prepare.
Ingredients for Smoked Polish Sausage, Apple and Sauerkraut
Casserole

2 golden delicious apples, cored and peeled
1 tablespoon of melted unsalted butter (you will get plenty of salt from the
Polish sausage and sauerkraut)
1 tablespoon of extra virgin olive oil
1 teaspoon of ground cinnamon
1/4 teaspoon of ground cloves
1/8 teaspoon of ground nutmeg
1/4 cup of grade B (dark) pure maple syrup
1 pound of smoked polish sausage
2 cups of drained prepared sauerkraut, you can use homemade or store-bought
sauerkraut
Directions
Cut the apples into one inch cubes. Place them into a microwave safe cooking dish along with the melted butter, extra virgin olive oil, cinnamon, cloves and nutmeg. Stir to coat the apples and evenly distribute the spices. Cover the dish tightly with plastic wrap. Heat at full power until the apples soften; this will take between 2 to 4 minutes, depending on how powerful your microwave oven is.
While the apples cook, slice the smoked Polish sausage into 1/2 inch pieces. Add the sliced Polish sausage, maple syrup and drained sauerkraut to the cooked apples. Stir well. Return to the microwave oven and cook at full power till heated all the way through (smoked Polish sausage is already cooked, so it only needs to be heated.) This will take between 2 to 4 minutes, depending on how powerful your particular microwave oven is. Remove the casserole and allow it to cool slightly before serving. This casserole is best served with generously buttered rye bread.
