Easy Dessert Recipes For The Busy Cook - Caramel Ribbon Brownies, Lime Cream, and Ice Cream Santas

Seems we live such busy lives but many of us still enjoy baking and/or making yummy homemade desserts. The recipes in this article will help us do just that. From the Caramel Ribbon Brownies, which go together quickly using a package cake mix and bake a total of about a half hour to Lime Cream to Ice Cream Santas, you can have an impressive dessert in a matter of minutes.

CARAMEL RIBBON BROWNIES
24 caramels (7-oz)
2/3 cup evaporated milk
1 2-layer size pkg of your favorite chocolate cake mix
1 cup chopped pecans or walnuts
6 tbsp butter, melted
1/2 cup semisweet chocolate chips
Preheat oven to 350 degrees. Grease or spray with nonstick cooking spray a 9 x 13-inch baking pan; set aside.
In a saucepan, cook the caramels and 2 tablespoons of the milk over low heat until the caramels are melted.
In a mixing bowl, combine the remaining milk, cake mix, chopped nuts, and butter; mix well.
Spread half the cake mixture in the prepared baking pan and bake at 350 degrees for 10 minutes. Sprinkle chocolate chips over the hot baked crust. Drizzle the caramel/milk mixture over the chocolate chips. Using a teaspoon, drop the remaining chocolate mixture over the caramel. Bake at 350 degrees for 20 minutes more.
Cut into 36 bars while still warm. Allow to cool in pan.
LIME CREME
1 pkg (4-serving) lime-flavored gelatin
3/4 cup boiling water
1/2 cup cold water
enough ice cubes to make cold water reach 1 cup
1 cup vanilla frozen yogurt
Dissolve the gelatin in the boiling water. Add the cold water with ice to the mixture and stir until slightly thickened; remove remaining ice. Stir in the frozen yogurt and spoon into dessert glasses or cups.
Note: You can turn this into a Christmas dessert by sprinkling some crushed candy cane over the top.
Yield: 6 servings
ICE CREAM SANTAS
All the ingredient quantities will depend on the number of people being served. For each person being served you will need:
1 large scoop vanilla ice cream (or chocolate, depending on your Santa's skintone!)
sugar ice cream cone*
canned whipped cream
M&Ms
small heavy duty paper plate or a dessert plate
Note: Children love making their own and the directions are very simple:
Place scoop of ice cream on plate.
Place a cone upside down atop the ice cream to make Santa's hat.
Use the whipped cream to make Santa a beard and to trim the bottom of the cap as well as a blob on top. Use the M&Ms to make Santa's eyes, nose, and mouth.
*The sugar cones with the chocolate coating inside add a bit of extra flavor and make the cone a little more sturdy.
Note: This is also a great idea for birthday parties but you make clowns instead of Santas.
