This Old Fashion Recipes Can Bring Special Flavor to Your Meal

I have brought out some of the recipes from my dependable old-time recipes. These delicious foods can bring an extra special touch to your meal. Try my Orange Candied Sweet Potatoes, Sweet & Sour Baked Beans, and Velvety Corn Pudding. I have made notations on a couple of the recipes updating them to a more modern healthy touch.

ORANGE CANDIED SWEET POTATOES
6 sweet potatoes, halved
2 tsp salt
1/2 cup boiling water
3 tbsp oleo*
1 tbsp orange juice
3/4 cup corn syrup
1/4 cup brown sugar
Combine the sweet potatoes, salt, and boiling water in a saucepan and simmer, covered, until tender (about 15 to 20 minutes). Pour off all but 1/4 cup of the stock from the cooking. Dot with the oleo.
Combine the orange juice, corn syrup, brown sugar in a bowl and blend well. Pour over the sweet potatoes. Simmer, basting frequently for 15 minutes.
*Personally I have changed my beliefs to stay away from margarines and use butter instead. Over the years as I have done a lot of nutritional research, it has become my belief that the body can better handle what nature supplies over manufactured products. However, since I have listed this as one of my old recipes, I have left it the way we enjoyed it for years.
SWEET AND SOUR BAKED BEANS
8 bacon slices, fried crisp and broken into medium-size pieces
4 large sweet onions, cut into rings
1 tsp dry mustard
1 tsp salt
1/2 cup cider vinegar
1 cup brown sugar
2 cans butter beans
1 can green lima beans
1 can red kidney beans, drained
1 large can baked beans
Combine the onions, brown sugar, vinegar, salt, and mustard in a large skillet. Cook mixture on medium-low heat for 20 minutes to dissolve sugar and tenderize onions. Add the bacon and all the beans. Put in a ovenproof pan or dish and bake for 1 hour at 325 degrees.
Note: You can also make this in a crockpot or slowcooker. Cook on low setting for 5 to 6 hours or on high for around 3 hours.
VELVETY CORN PUDDING
4 eggs
6 tbsp melted butter
2 tbsp flour
1/2 tsp onion powder
1/4 tsp paprika
1/4 tsp garlic powder
1/2 tsp salt
1 pkg (10-oz) frozen whole kernel corn
1 can cream-style corn
1 cup whipping or heavy cream
Preheat oven to 325 degrees.
Grease a deep 1 1/2-quart baking dish; set aside.
In a mixer bowl beat the eggs until thick and lemon-colored. Add the butter, flour, onion powder, paprika, garlic powder, and salt; beat until smooth. Stir in both of the corn products and the whipping cream. Transfer mixture to the prepared baking dish.
Bake at 325 degrees for 1 1/2 hours or until a butter knife inserted near the center comes out clean. Remove from the oven and let stand for about 5 minutes.
Modern note: You can cut the cholesterol by 99% and the calories and fat by 50%, if you substitute 1 cup of egg substitute for the 4 eggs and evaporated skim milk for the whipping or heavy cream.
