Feeling Sentimental - Enjoy Some Old Fashion Desserts!

Author: Linda Wilson
How about taking a trip down memory lane and enjoying some old fashion desserts? Try the Dessert of the South with this Easy Bread Pudding Recipe. I know it is considered a "Southern Dessert" but I did see it in the bakeries when I lived in New York City! So wherever you are, enjoy this delicious treat! I have several persimmon pudding recipes as that is a very popular dessert in Southern Indiana where I was born and raised. I call the Persimmon Pudding my 1961 recipe because I have had it since my high school days! When you want to make quick pie, made the Kisses-Cherry Pie. Make it even quicker by using a store-bought graham cracker crust!

EASY BREAD PUDDING
1 pkg (4-serving size) vanilla pudding mix
4 tbsp granulated sugar, divided
3 cups milk, divided
1/4 cup raisins
1 tbsp butter
1/2 tsp vanilla extract
6 slices dry white bread, cut into cubes
1/2 tsp cinnamon
1/8 tsp nutmeg
In a medium saucepan combine the pudding mix and 2 tablespoons of the sugar; blend in 2 cups of the milk. Add the raisins. Cook, while stirring, over medium heat until the mixture comes to a full boil. Remove from the heat and add the butter and vanilla extract. Place the bread cubes in a bowl and pour the remaining milk over them to soften; stir into the pudding mixture. Pour mixture into a 1-quart baking dish that has been very lightly buttered.
Heat broiler.
Combine the remaining sugar with the cinnamon and nutmeg; sprinkle over the pudding. Broil about 5-inches from the heat for 4 or 5 minutes until the top is lightly browned and pudding is bubbly.
Yield: 6 servings
1961 INDIANA PERSIMMON PUDDING
2 cups + 2 tbsp. persimmon pulp, separated
2 cups sugar
2 eggs
1 cup flour
1 1/2 tsp baking powder
3/4 cup milk
1/4 cup cream
1/3 cup butter
Mix 2 cups pulp, sugar, eggs, flour, and baking powder. Stir, then add milk and cream a little at a time. Add melted oleo, then for an extra dash add two more tablespoons of extra pulp. Bake at 350 degrees for 45 minutes.
I melt the butter in a 9 x 13-inch pan in the oven then use same pan for baking the pudding.
EASY KISSES-CHERRY PIE
1 baked (9-inch) pie shell
1 pkg (10-oz) Mini Milk Chocolate Kisses
1 1/2 cups miniature marshmallows
1/3 cup milk
1/2 pint cold whipping cream
1 can (21-oz)cherry pie filling, chilled
Whipped Cream
Place 1 cup of the mini kisses, the marshmallows and milk in a medium micro-wave safe bowl. Microwave the mixture on high for 1 to 2 minutes or until chocolate is softened and the mixture is melted and smooth when stirred. Cool mixture completely.
In a small mixing bowl, beat the whipping cream until stiff. Fold whipped cream into the cooled chocolate mixture. Spoon the mixture into the prepared crust. Cover and refrigerate four hours or until firm.
Just before serving, garnish the pie with the pie filling in the center of the pie. Place whipped cream around the pie edges and set extra mini kisses on the whipped cream for a pretty presentation.
Enjoy!
