Cooking with Real Butter

Ever since I read the articles about how Norway ran out of butter at Christmas, I've been enjoying every bit of butter I eat. I wouldn't say I'm hoarding butter, but I did print butter coupons and stock up while butter was at a discounted holiday price.

Butter freezes very well, so I always buy butter at the holiday seasons while butter is cheaper.
Finding butter coupons is easy. Storing butter is easy. And using butter is very easy.
I make breakfast from scratch for my family every day of the week. So we actually use lots of dairy products every week. I've found that the healthy dairy is much more healthy for my family. The doctors are amazed by the level of health my kids enjoy. They also run fast and enjoy sports on a regular basis. Because butter is a natural fat, it's much better for their little hearts and their bodies.
Quality dairy food is more filling which is why I seek out butter coupons to make large breakfasts every morning. When the kids eat cold breakfast cereal like corn flakes for breakfast, they report that they end up being hungry before lunchtime. When the children eat buckwheat pancakes with butter and natural maple syrup and fresh peaches, they are completely satisfied for hours.
I love making breakfast. I love butter, and I love butter coupons. Here's our favorite Buckwheat Pancake Recipe.
Buckwheat Pancakes with Butter
2 eggs
2 T melted butter
1 t. vanilla sugar
1 c. whole milk
1 T. baking powder
1 c buckwheat flour
¼ c. white flour
Top with fresh butter, real maple syrup, and fresh peaches (when available.)
Recently I've started having the kids help me make breakfast. Their favorite go-to breakfast recipe is the super fluffy and puffy German Pancake. It's an easy dump and blend recipe. In just 20 minutes you'll have a gorgeous dish you can top with natural syrup (we use blueberry infused agava nectar) and thick pats of creamy butter.
German Pancake
6 eggs
1 cup milk
1 cup flour
½ teaspoon salt
2 tablespoons melted butter
2 tablespoons sugar (optional)
splash pure vanilla
Blend until smooth, pour into a well buttered pan, and bake for 20 minutes at 400 F.
