You can make a fat-free stew or soup by using fat-free soup stock or broth. Keep fat content to a minimum by loading the soup with lean meats and vegetables. Let your soup chill in the refrigerator when it is done cooking. When it's chilled enough, you'll see hard fat clumps floating on top. This will make it easy to remove and discard the hardened fat. You will be eliminating roughly 100 calories for every tablespoon of fat you remove.

Buy fresh cloves of garlic and mince them yourself for use in recipes. A rule of thumb for garlic: Fresher means sweeter. Fresh garlic is firm and lacks bruises.

If spices and herbs are used regularly in your cooking, keep them somewhere dark and cool in order to keep their fresh flavors. If you put them above the oven, or in another warm place, the spices and herbs will not retain their flavor.

"Trussing" is simply tying the turkey's legs and wings together with string. It pulls the legs and wings close against the bird, which helps the turkey to cook more evenly. If the turkey is not trussed, the turkey's extremities, including the wingtips and feet, can burn before the whole turkey is cooked.
