Wedding Desserts: for your wedding, pomegranate with a twist

Eating pomegranates is a New Year's eve tradition in many countries of the world since it is supposed to bring good fortune on the love front. The myth comes from the legend of Proserpina, daughter of Jupiter and Ceres, who symbolizes faithfulness and loyalty, though the story has little to do with love. Proserpina was kidnapped by Pluto, king of Hell, and although she was found by her parents, she was unable to return among the living because she had tasted food during her stay on the kingdom of the dead, in particular de grains of a pomegranate. Therefore, on New Year's Eve we eat this fruit hoping it brings us good luck on all heart matters, but also as another excuse to include the beloved by all Italians color red on our celebrations.

For your wedding, we suggest a particular way of eating pomegranates, a deliciously light dessert that is likely to be appreciated by your guests after the copious reception dinner in your wedding venue or location of choice. In case you are having a do it yourself wedding, you can prepare this cake with ingredients you probably have at home or can find at the nearest grocery store, since no uncommon ingredients or professional kitchen equipment are required. The dessert is basically a variant of a cheesecake with pomegranate jam on top. Here is how to do it at home.
You will need 250 grams of cream cheese, three eggs, three natural yogurts, three spoonfuls of flour and ten spoonfuls of sugar. Mix all the ingredients in a bowl until you obtain a uniform, lump-free mixture. Put it in a buttered cake mold and cook in the oven at 170 C during twenty minutes or until the cake is completely cooked. You can check by piercing a knife which should come out clean once the cake is ready. Turn the oven off and leave the cake inside for five minutes. Take it out, let it cool and put in the refrigerator. If you want you can use Philadelphia cheese as the base or any other cream cheese you like using for the preparation of soft canapés. If you are unsure which base is better, bake a couple of small ones for a person whose taste you trust.
To prepare the pomegranate ham, add a quarter cup of sugar to half a cup of pomegranate juice. Add a teaspoon of natural jelly and let it sit for a few minutes. Put the resulting jelly on a pan with two spoonfuls of sugar. Once they have melted together, add some of the grains you have left from making the juice and put it all in a cold glass bowl so it cools down a little bit. Cover the surface of the cake with the pomegranate jam and leave in the refrigerator for at least an hour. Serve cold.
An even easier version of this cake can be prepared without an oven. Put 150 grams of plain cookies in the chopper and turn it on until they have the texture of sand. Put them in a bowl and add three spoonfuls of melted butter and three spoonfuls of sugar. Put the mixture on the base of a cake mold and press thoroughly so that it doesn't break when unmolding. In a big bowl mix 200 grams of cream cheese, five spoonfuls of sugar and two spoonfuls of lemon juice. Add this to the mold and leave on the refrigerator for at least an hour. Cover the top surface with the jam, from the recipe above and leave for another hour.
This cake could be a great add-on to your wedding menu that both children and adults are sure to appreciate. You can even make this your wedding cake by presenting a big one with the cake topper and tiers underneath made of smaller, cupcake-size little servings.
